ANALYSIS: European Egg-Product Prices Soar amid Higher Input Costs, Covid, Bird Flu

A shift in consumer habits due to COVID-related restrictions, along with record-high inflation rates and the spread of Avian Influenza, has led to unprecedented price increases for European egg products in recent months. While values are up across the entire complex—whole egg, yolk, and whites alike—gains in the latter category have been especially pronounced.

Demand for liquid yolk, which is heavily used in foodservice channels, has taken a considerable hit due to Covid-related restrictions throughout the EU. That has led to a substantial downturn in separation needs and, in turn, the availability of whites as a byproduct. Liquid egg-white values have doubled since the onset of the pandemic, with a 42% increase registered in the past five months alone...
